What’s for Dinner: Weekly Menu for Busy Runners
I’ve never been a person who enjoys prepping food on Sundays for the week. I wish I did (or could teleport others who do to my house for a few hours each Sunday to fill my kitchen), but alas, there are no baggies and individual serving-sized containers of food in my fridge ready for the weekdays or casseroles, energy bars or prepped meals in the freezer. As wonderful as that would be come Monday or even Thursday evening, I simply can’t will myself to spend a few hours on a Sunday doing that. Instead, I search my Pinterest boards, recipe files and the go-to meals I have in my head for our weekly menu, essentially starting from scratch each weekend. And every evening after work, I inevitably wish there was a magic fairy (or all that prepped food that could have made life easier) to make dinner quick and easy.
One thing that always seems to take up the most time is deciding what to make. I’d love a list to miraculously appear each Sunday, and I imagine many of you feel the same way. To help prevent your Sunday struggle, here is the menu at our house this week if you need some dinner inspiration. I’d love to hear your meal ideas and menu plans, too!
- Monday: Salsa Chicken Casserole
- Tuesday: Beef tenderloin (I cook mine in the oven at 425 degrees F with salt and pepper. I also love the Filet Mignon tenderloin from Trader Joe’s that is already seasoned with clean ingredients and ready to pop in the oven.) with Crockpot Bacon Cheese Potatoes and Parmesan Zucchini and Corn
- Wednesday: Turkey Zucchini Lasagna
- Thursday: Sweet Potato Chicken Stew from the Runner’s World Meals on the Run Cookbook
- Friday: Go out to dinner

I thought I was the only runner who didn’t prep all my meals for the week on Sunday! I just can’t bring myself to!
I normally plan the week with my fiancé, we split the week in half and we are each responsible for those days. We have to eat whatever the other makes, within reason.
My go to meal in the summer is pasta salad. I whip this one up at least once a week. Cooked pasta, top with chopped tomatoes, chopped onions, chopped cilantro, cubed cucumbers and chopped pepper. Salad Vinaigrette: juice of 1 lime, red wine vinegar, olive oil, salt, pepper, and paprika. Mix all and enjoy!

I try to do some meal prepping on Sunday’s but usually the most I do is make my grocery list and go shopping and possibly prep one thing for the week (but don’t put it in individual containers).
I need to try some of there recipes- I tend to go back to my go-to recipes. I just got the Fixate cookbook by autumn calabrese and am making a couple new things this week which is fun! I’m actually eating a new salad as we speak which is delicious – hoping to share it on the blog soon!
I always meal plan before hitting the grocery store but prepping is another story. Sometimes I do nothing, sometimes I cut veggies or make snacks. Our menu this week from sat-fri: turkey, pepper, sweet potato skillet, “Indian food” (aka pasta, ground beef with corn/tomato and BBQ sauce), paprika chicken w/veggies and salad, pork tenderloin in crock w/rice and broccoli, home made pizza and dinner at my parents. One day is still tbd as I was out of ideas! Might be zucchini or sweet potato “nachos” or something simple.
I did prep some turkey/beef meatballs to make lunches for my kiddos and just realized I left them on the tray in the freezer since yesterday! oops. Should have set a timer. Hopefully I remember when I get home to bag them.
I’m not much of a meal prepper either! If I’m making something like quinoa or brown rice I’ll cook up a big batch, but nothing too involved. I meal plan before grocery shopping, but usually each season my husband and I rotate through the same 5-10 dinners since it makes planning so much easier!
I like a bit of variety and try to make one new meal every week… I love recipe books! Having said that, my go -to meal is meatball wraps. I buy good lamb mince from the butchers, make them into meatballs in a big batch (which takes about 5 mins). Then they only take 5 mins to cook and add into a wrap with lots of salad, avocado and hummus. Its my favourite midweek dinner!
My best two go to’s each week – Breakfast Burritos and Mason Jar Salads! Both of them are so tasty and make my week so much easier. I have to confess….I am one of those who meal preps every week. I have been doing it for over a year and rarely miss (like, twice). Mostly because when I do my life feels like it has been thrown into chaos lol!
Favorite recipe of the week? Meatballs in Burgundy Sauce! Quick to throw together, delicious and goes great with either egg noodles or brown rice! (Recipe is in my most recent Meal Prep blog post for anyone wanting it!)
